Schezwan Chicken

Schezuan Chicken Wraps

2 boneless chicken breast cut into thin slices
3 Tablespoons cornstarch or flour
3 garlic gloves or 1 1/2 tsp minced or garlic paste
4 1/2 tablespoons soy sauce
1 1/2 tablespoons rice or red wine vinger
1 tsp. sugar
1/4 c. water
1/8 - 1/4 crushed red pepper (optional)

put flour and chicken in ziploc bag and mix it up. cook until chicken is brown. mix in the garlic. mix soy sauce, vinger, sugar, and water and then pour over chicken. Cook until everything is warm (you want a little sauce to pour over wrap)

In the wrap you put cabbage, lettuce, fresh sliced mushrooms, then the chicken topping it with the Asian toasted sesame dressing. Enjoy!

Meat Loaf

This is something that is so easy and my family loves it. Sorry that I don't have any exact measurements, just do what you feel is best for your family...

1 lb of hamburger
oatmeal (about 1/2 cup)
2 eggs
shredded carrots
cheese
ketchup
worcestershire sauce
brown sugar

mix in a bowl hamburger, oatmeal, eggs, worcestershire sauce and shredded carrots (Carson hates cooked carrots so I do just enough so there are hidden!)
take a little less then half of the meat mixture and put it in a greased loaf pan. put on top of that ketchup, a little brown sugar and layer the whole thing with cheese. then put the rest of the meat mixture on it, then ketchup, brown sugar, and top it off with cheese. I cook my at 375 for 1 hour.

Cheese Chicken

*While yet a pregnant mom, I'm still busy and enjoy no-fuss cooking. Hooray for easy meals!

Preparation time: 10 minutes
Cooking time: 2 hours

2-3 lbs. frozen skinless chicken breast or chicken tenders
1 can cream of chicken
1 can cream of celery
1 cup sour cream
2 cups shredded cheddar cheese

Mix everything except chicken in med. bowl. Lay chicken in a 9x13 casserole dish and cover evenly with mixture. Cover with aluminum foil. Bake at 325 degrees for 1 hour 45 minutes. Remove foil and bake an additional 15 minutes. Serve with baked or mashed potatoes.

Salisbury Steaks


Salisbury Steaks
* 6 Ritz crackers
* 1 cup milk
* 1 beaten egg
* 2 lbs hamburger
* pinch of onion salt
* salt and pepper
* 1 or 2 pkgs brown gravy

soak crackers in milk for 2 minutes. add beaten egg, hamburger, pinch of onion salt, pepper and salt. mix together; form into patties and brown in frying pan on both sides. put browned patties in casserole dish. mix gravy according to package (you can use one or two packages- personal preference decision here)
pour gravy over meat (can also add canned mushrooms) Bake at 350 for 45 minutes

East/West Flank Steak Wraps

East/West Flank Steak Wraps (I hardley ever buy steaks so I just use chicken)

Dressing:
1 c. rice wine vinegar1/2 c. soy sauce1 tbls. honey2 tbls. sesame oil

to finish:
1 beef flank steak (1 1/2 -2 lbs.)4 cups coleslaw mix1 c. chopped green onionsSalt & Pepper8 medium flour tortillas1/2 c. honey roasted peanuts - coarsley chopped

Combine dressing ingredients in a jar & shakePlace beef and half dressing in a bag - marinade 10 min in fridge. Toss remaining dressing w/ coleslaw mixture. Grill steak - cut in thin strips diagonal
